Khemchand Daulat’s Chaat
Khemchand’s son tells that the process of making chaat starts from the night itself. For this, milk is churned in a big pan under the open sky until foam appears. Daulat ki chaat is made from this foam.

How is Daulat Ka Chaat made?
The foam that comes out after the milk is churned is kept in a special vessel under the open sky overnight. After this, drops of dew fall on this milk. This creates a cream layer. After collecting this cream, a little sugar is mixed in it. It is mixed with cream, milk, saffron and dry fruits and whipped several times. Know that it is made only during cold nights, i.e. around December to January.
